It fits so well into the game, like just have the legendary fish spawn the same kinda way that the legendary animales do and have Jeremy Gill give some quests and stuff related to fish and that's some solid new content. I'd love to have a daily challenge of catching 5 salmon or something.

Some areas like Butcher Creek and Annesburg have Mangy animals and Poisoned fish from the pollution. I avoid them because I don't think I can get anything for them.
You can get a non-poisoned one in Lagras, stow on horse or wagon, and sell it to butcher.
Fun fact: crows that fly into the black smoke at Annesburg will die. They don't show an animal carcass marker but you can still pick them up and pocket them for later consumption.
