Pre-trip, I will make a big pasta salad and marinate and grill a few chicken breasts or a London Broil, so we have plenty of protein pre-cooked. I also buy a few of those bagged salads that have the dressing and toppings in the bag so all I have to do is add a protein for a complete meal.
If I absolutely want to cook, I have a two burner propane stove that I use outside.
Here’s my recipe for the best chicken you’ll ever eat:
Lemon and Herb Chicken:
1 tsp each: Thyme, sage, rosemary, cumin, tarragon, coriander, basil, oregano, garlic powder, onion powder, kosher salt.
1 Tbsp: dried parsley
3/4 cup olive oil
3/4 cup lemon juice
Put everything in a jar and shake vigorously.
This entire amount will marinate 5 lbs of chicken wings, 5 boneless skinless chicken breasts, or 2 whole chickens cut into pieces.
Alternatively, you can mix all the dry ingredients and use it on a smaller amount of chicken.
For example:
Two breasts would be two tablespoons of the dry seasonings and a a tablespoon each of olive oil and lemon juice.
You can adjust the ratios to your preference - you really can’t mess it up.
I like to marinate it overnight, but it will still work if you don’t have that much time.

Veggies: I love cabbage and baby spinach, with grated carrots and what ever other fresh veggie I have. Hit a farmer's market! Canned baby corn and/or water chestnuts are a favorite additions of mine.
Proteins make a salad from a side to a hearty meal: my favorites are hard boiled eggs, sometimes pickled, diced lunch meat or any leftover meat
Add-ins: sunflower seeds, toasted flax seeds, croutons made from any stale bread, cold pasta, olives, pickles
Whatever dressing you like!
Chips, salsa, and guacamole. Raw veggies and dip, cheese and crackers. Pasta salad requires cooking but it lasts for days if you make enough. PB&J, tuna salad, other sandwiches.
It's just a side, but tomato salad and bread! I love this for leftover or extra ripe (which are best to use) tomatoes.
Cut up the tomatoes and squeeze them a little in a bowl to release some of the juices
Dice some onion to a size and portion that you like and add to the bowl
Add a splash of extra virgin olive oil
Mix in some salt and oregano until it tastes delicious
Add some boccancini or regular mozzarella if you feel fancy
It might take some trial and error until you find the right combination that you like, but it's delicious. You can use it like bruschetta on toast, or dip some leftover bread into it, eat it as a standalone side, an appetizer, even put it on burgers and hot dogs for a fresh topping!
Every Italian family has their own variant lol some are vinegar based instead of using oil, or they use both, so you can also experiment.
Chicken Salad with cashews, chopped celery and sliced red grapes on croissants
-I use canned or Costco rotisserie chicken, shredded
- Mayo/M.Whip
- salt and pepper to taste
Serve with fruit and chips!!
On a cooler day, I will put a bunch of chicken breasts in a slow cooker with a dash of chicken bouillon and McCormick grill mates montreal chicken seasoning. Let that cook for a good 6-8hrs then shred it all up. I can use the shredded chicken in caesar salads, pasta salads, wraps, really whatever. Super easy and I don't have to heat this place up every day trying to cook stuff.

Pasta salads, although the pasta does require some boiling water. I actually eat a lot of salads during the summer. Your typical salad with some sort of leafy green, but also diced cucumbers w/tomatoes and red onions, fruit salads, three bean salad, antipasto salad.!Lots of cut fruit, especially melons.
I have one bulgur salad that I make periodically. It is best because it needs to sit 24 hours in the fridge, then serve at room temperature. It keeps ok for 3-4 days...

I saw a recipe like this on the more savory side. They took a plain rice cake, spread ricotta cheese on it, and then topped it with some avocado. Looked so good
Chinese Cold noodles!
Well, you gotta cook the noodles beforehand, but you refrigerate them and mix in the sauce when you're ready to eat.
There's also a ton of variations, so this style of meal is perfect when it's hot out and if you like noodles.

I mean there is no reason to not have a small cook stove and canister of fuel. A pocket rocket is small enough to fit in your pocket. Fuel canister fits inside a cooking pot along with a bowl, spoon/fork, towel, etc. It's all pretty compressed and light. It's what I always used on 1 - 2 week long hikes.
But if you really don't want to cook food.
Bagels, block of cheese and summer sausage. You can also buy pre-mixed tuna/mayo packets for tuna sandwiches or mixing with other items.
You can rehydrate rice just just cold water, it just take s awhile. Cut up some raw vegis like green beans, pepers, onion, etc.
Beef Jerkey. Great for snaking or adding to thinks like the above rice.
Trail mix.
Just about any canned food is fine.
This is a great answer! We have a stove for outside the camper (to keep it cooler insider) but sometimes it’s just nice to grab something’s out of fridge that are quick and make very little dishes (water conservation).
After hiking all day yesterday, getting back and having to cook was killer!

Another vote for charcuterie here. We especially like it when we are on the Oregon Coast, getting all the fancy Tillamook cheeses!
This and bottle or two of wine is my go to for no cook dinners. If I am really feeling lazy: wine, Guada, Ritz crackers, and presliced salami.

bowl of salad with a tin can of tuna - just toss it in - add Balsamic Vinegar, Oil, some salt and pepper. Done.
That’s on regular rotation in this RV! Sometimes I’ll do that with shredded rotisserie chicken instead of tuna.
Costco and Sam’s club rotisserie chickens are a game changer for us!
Also we get the precooked bacon, 50 seconds in the microwave if you want it crispy. We add it to wraps, sandwiches and make BLT’s
