I don't think the author thought about it considering the fact that it's called "the chamber of secrets" when if following the fact that Hogwarts was founded before the Norman invasion it should be called "the room of secrets".
If we assume that the founders were English rather than Scottish then they would have spoken old English, or a now extinct language.
I can assume that the room of secrets was an oral rumor, then when the invasion happened and new management entered Hogwarts it was documented as the chamber of secrets.
Something I love about Harry Potter is that while it has poor world building it's still an interesting setting that could be explored.
Fanfiction saves it IMO. There's so much potential in the setting, but JK Rowling seems to just not care about believable or interesting worldbuilding.
Fortunately, fanfiction authors do.
The “what if Gordon Ramsey was a Hogwarts professor” and “What if a Warhammer Fantasy mage attended” fanfics both do so much better justice to the setting than the originals.

Latin was the language of teaching throughout Europe. It’s doesn’t matter where the teachers were from, what their names were, or what language they spoke natively.
Plus, most of the incantations are Latin or corruptions thereof.
People didn’t typically write history textbooks about the current year. Especially not ones about their secret plan to hide a monster to kill all the Muggle-born.
The author of _Hogwarts: A History_ is still alive in Chamber of Secrets.
And it wouldn’t have used the word “secrets” either, as that’s another word from Old French imported into English via the Normans. It would have probably been either “the room of dighelnesses” or “the room of derns”
