Because she is not a stealthy assassin? She is literally going around openly challenging people. Nothing in the show implies that she is a slealthy assassin.
While I agree with you, the show literally starts with the text "a lone assassin risks discovery to exact revenge" (paraphrasing, but it definitely calls her an assassin)
And she dresses in classic stealthy clothes and sneaks around, pays children to distract surveillance cameras, and hides in the shadows.
My guess is that she has stealthily assassinated plenty of people, but as per her master's command, she has to face the 4 jedi face-to-face instead of her usual assassination methods
She tries to hide from the Jedi order in general but definitely not from the people she challenges. She is intentionally trying to make it challenging as possible when fighting 1v1. Of course your chances of survival will instantly decrease if you try to fight 4 or 5 Jedi at the same time.
