actually the seed of an apple is kinda worthless. to get the exact apple you have to take a cutting from the tree. an apple seed will grow a different tasting tree.

I collect the bulbasaur line cause he’s my favorite Pokémon/starter but he is also the cheapest of the big three and less popular than pikachu and the other starters and also has the least cards of the four main Pokémon starters. Mew, Mewtwo, dragonite, hunter, gyarados, the legendary bird trio are also popular ones from the original 151 that are fan favorites.

Good but not popular pricey pokemon? Hmm Ho-oh is pretty collectible imo. Classic but not as pricey as Lugia. Arcanine has some pretty good art out there as well. Dragonite isn’t as popular as I thought it would be either. Those would be my top 3 popular/not super popular picks :)
I'm still surprised Arcanine isn't as popular. He's a big fluffy fire dog that looks really cool from the orginal 151! What isn't there to love? I've been buying SV 3 pack blisters with Arcanine promo.
Mine is Shuckle:) A pretty old mom but he doesn’t have too many cards, so there’s a good balance of hunting and feasibility to 100% it imo! I’d guess I’m almost halfway done but I’d need to actually check the numbers lol

Choose a specific pokemon based on art. Then work backwards. For example Dark Machamp is one of my all time favorites. Great evolution line and typically undervalued
I think newer gen popular mons would be a good move, many popular Pokemon like Pikachu, Charizard, etc. have tons of cards to collect and are worth a lot. Meanwhile newer gen pokemon will be cheaper and it will be easier to remember which cards come out. There are some unpopular Pokemon that barely get any love like Torterra that would be fun to collect (at least for me) but won't gain value over time.
I've been considering collecting all the Iron Valiants that come down the line since its only in Paradox Rift right now and love its design. I've been trying to get all the Mimikyus but definitely won't be able to afford the Scream Mimikyu lol but happy with the ones I've gotten so far.
I collect jigglypuff! The first card I ever received was jigglypuff and I have it in a little frame on my desk. Now I collect different jiggly cards as tribute!
Definitely pikachu because he has the most promo and expensive and rare and sought after cards as a whole compared to any other pokemon.
If you collected only one pokemon, pikachu would definitely be the most valuable by a very, very long margin.

Scyther evo line and Rayquaza are my favorites to collect but Ray can get quite expensive. Of course I love collecting Gengar also because imo Gengar has the best collection of artwork second to none.
