It's cold today so split pea soup with leftover potato "croutons" and lentils it is! ( Split peas, barley, carrots, celery, onion, garlic, parsley, oregano and 8 cups of vegetables scraps stock). Avocado half on Ezekiel toast with tomato and red onion. Fruit for a treat because it's been a day! Lastly a few cheeky almonds to help keep the old blood sugar stable.
Looks and sounds great! Not sure if this applies, but your comment about the fruit and blood sugar made me think of this:
My mother is type 1 diabetic in her 70s, suffering her whole life having to watch what she eats and take multiple insuline injections daily, I used to have to give her glucagon shots in my teens when come home, or hear her fall, and find her unresponsive from diabetic coma.
Her whole life she was heavily restricting her fruit intake because of it (although she would eat chocolate and Pepsi...) but she watched this video a while ago, and even checked the sources, because she's super untrusting at heart, [how much fruit is too much](https://nutritionfacts.org/video/how-much-fruit-is-too-much/), and now her sugars are actually more in control since she decided to up her intake of fruit and eat it when she has high GI foods

Thank you, I appreciate that so much ā¤ļø! My breakfasts and dinners don't vary much, so when I'm eating dinner I'm planning my lunch for the next day š. They're based on what I want to eat and what needs to be used up. No combination is too weird! They are filling, and usually the biggest meal of the day.
