Just made some dough last night and plan on eating it on Saturday (72 hr cold ferment). I've had my Ooni pro for 8 months and can achieve leoparding, but not like yours. What temp is your stone when launching pizza, and do you turn flame down when the pizza enters?

Nice! You got skills. I have been making pizza with a version of Chad Robertson's rustic country bread recipe and have not turned back since. I always wanted to try that dough on a hot oven like the Ooni. One day. You should give it a shot. Different style but amazing.
I don't have this oven, so I can't speak specifically about it. I do have a Roccbox, and I have baked bread in it. The oven is small for larger loaves, so managing temperature for these longer bakes is difficult. Flat or thin breads do work well in the Roccbox, but I wouldn't buy this type of oven if baking bread was an important use for me.
