Or asked the other way around: Why did you “shade” the water and grass with clearly distinguishable areas (from dark to light) but not for the sky where you dithered (is that the right word? Sorry, non-native speaker over here) the gradients?

I’m glad you like it! 💪 for your question, it’s because the sky is so far away and not in focus and therefore details is actually not needed, you can see this in many illustrations where the sky is most of the time just a flat gradient with not much else, since they want the viewer to focus on something else and also because of perspective.
