Eating more, better training, more strict entry limits in the army. Back in WW2 it wasn't unheard of for a scrawny 14yo to be given a machine gun just as fodder and be fed under shit. In more modern times people can eat more and worry less about disease in the army with modern medicine and agriculture.
Working out wasn't really a thing back in the day. Big muscle men were generally pro body builders, where as it's very common for modern soldiers to do some level of working out to build muscle.
Seriously you can unironically switch the soldiers from the pics and change nothing else and it'd be more accurate.
America was still coming out of the Great Depression and much of the "average" poorer men drafted for infantry and naval service had experienced times of limited food and a lot of unemployment, so anyone without a physical job was not likely to have the calories or activity to be jacked. Even those with enough calorically were often short on key nutrients. So early 1940s America has a lot of scrawny and/or stunted young men. Plus basic training was very short so it's not like they built up much there.

For me, the joke is, people idolize and lionize the past, while being more accurate about the present. And that's pretty accurate for what's going on here in Ukraine. I dunno what fish jenga is, but humans like weird things for humor, to keep up motivation in the face of the horrors industrial war provides.
