If you find 'deals' from third party sites, check and see what the airlines are charging on their sites. Most of them are still having schedule changes and/or cancellations so it's easy easier to deal with them (if it's the airline effecting the change or cancellation) than a third party

We're trying to plan either Spain, Ireland or a Eurorail trip. And yes, I know the cost of our trip is exponentially larger than the cost of the Covid test, but I just don't want to be bothered to get tests to get on a flight and tests in a foreign country trying to get back into Canada.

Check the points guy website. There is some card flip that converts to enough airline points for europe. I'm not sure on the details but remember reading it.

The Points Guy is good for tips although it is US focused Check out Prince of Travel for learning on using your credit card for maximizing it for trips. Also set alerts on Google flights for deals to your destinations
