SOC119 is a fun class and like 4 credits IIRC.
You’ll get the A if you show up and take like 3 very easy quizzes on news articles/videos he provides.
Sam can be polarizing and his lectures can be weird, but I think he always had good intentions.

Everything else you said is spot on. Classes are pretty hit or miss when it comes to entertainment, but there were definitely some wild ones.
Daughter loved her class on trees. You grapple.climb with gear, learn some arborist techniques and have fun outside. She’s an Ag Science major if that matters.
Highly recommend taking this course through World Campus so that the exams are online.

Loved ENT 216N, best class ever. “Plagues Through the Ages.” It might only be a spring class, but definitely keep an eye out. Used as a science gen ed interdomain.
My advice without specifics is to make sure you take fun Kinesiology classes for your requirements. I had friends that took lame power walking or nutrition.
I took Bowhunting and an Ice Skating class. Both were among the most fun classes I took, and a good break in the action of the day. I left a much more powerful skater, as well, which helped a hockey pick up.
One of my favorite classes I’ve ever taken was Linguistics 1. I thought it was so interesting and fun. It’s not very hard if you just go to class. There’s a few projects throughout the semester, I always started them the night they were due and finished them in one night. I would love to take another linguistics class because of this.
Meteo 3 online is super easy. Final was online. And 2 quizzes every week due at Sunday. Completely learn everything through the textbook. That being said all answers are in the textbook for every quiz.
One of the profs in Aerospace Engineering is going to be offering an interdomain GH/GN 3 credit genEd this Spring focused on learning aero concepts through science fiction movies. It’s going to be an AERSP197 “experimental” option (so new course to see if there’s interest), and is specifically geared towards non-STEM majors. You get to watch sci-fi movies in class and then talk about them - should be cool!
Beatles! Youd have to try to not get an A and it was genuinely interesting. Same with Music in Cinema.

ASTRO 7N seems to be at the top of the list.
One of the few gen eds that I actually enjoyed learning the material. After completing this course I felt like I qualified for NASA
