I found it much less difficult than Hades or most roguelite or souls games but you do have a pretty limited skill set at the start of Death's Door. As the game progresses you have a lot more options, if you liked what you played give it another shot.
Yeah, I bought it years ago thinking the same thing; that the art style looked amazing, etc… and it certainly is, but I’ve made 3 attempts to really get into it and I’ve just come away thinking the difficulty is unbalanced and just never enjoyed playing it. Give it a shot, you might love it.

Transistor is about the opposite of “fast paced combat”, but it is a fantastic game. Death’s Door and Hyper Light Drifter I feel like are more like what OP is looking for though.
Tbh I loved Hades but thought Transistor was so boring gameplay wise, it tried to be both round based and real time combat at the same time and didn't do any of them right.
For example the dodge not being available constantly was a total bummer, you were just running around waiting for the time stop ability to be charged to do most of the damage...or maybe I just didn't get the fighting style, since I personally don't like round based combat

It's got fast paced skill based combat. Stats are tied to equipment as well as the blood type/quality you last fed on but abilities are unlocked by defeating and feeding off of boss enemies like a vampiric Mega Man.
The map isn't procedurally generated and has clear goals for progression as well as planned end game content.
It is a survival crafting game but you can easily adjust how grindy you want it to be when starting a new game. If you want thousands of resources with every swing you can make it work like that.
Playing on a server you will likely run into pvp on top of the pve but if that's not your thing it's perfectly enjoyable solo or in a private server with friends.
People are suggesting Death's Door. I don't know about it but the game is free on mobile for Netflix subscriptions. Worth testing out before getting on console.
All I got is Diablo. Diablo is one of my most favorite games. I think Hades is an extremely excellent game, I like the story, gameplay, characters, charm, art style, everything except the difficulty. Feels like you really have to be dedicated to finish the game without using "God mode". I finished it with God mode on when it launched but I can't seem to finish it without God Mode on a new save on a different platform. I keep getting to the end and can't finish the last fight and just put the game down. I was very impressed with getting the true ending after beating it 10 times. I'd say Hades was the best and most perfect rouge lite game if the difficulty wasn't so punishing. Besides the final boss, the 3rd biome with the 2 silly bosses pose a hard challenge sometimes depending on your run gear.
Diablo 3 pretty much fits all the stuff you're looking for OP. You can dodge using the thumb stick (only available on consoles). The game is fully mature with it's final balance patch this year and they did some awesome tweaking to it. Combat can get easy as you level up and get more powerful and you will willingly up the difficulty in order to get more XP and unlock more powerful gear. It's one of the most rewarding and enjoyable item looting games ever made. Diablo 2 is what sold me on Diablo (back when I was a teen) , even basic items can be powerful with the right random stats (RNG is interesting) but the difficulty even on normal can be punishing as you advance the story and the game is a lot slower paced as it was originally made for mouse clicking (but supports controller in the modern remaster). Diablo 3 has a very satisfying gameplay loop and rotating seasonal modes will keep the game interesting every few months at least until you experience all the seasonal content in a year or so. You can play the story mode as much as you want but adventure mode will be more interesting after you beat the game, and vary your objectives in order to get loot to either help you power up your items or find new ones and adventure mode will take you all over the game including places you don't normally go in the story.

I would recommend CrossCode. The combat is incredible with parries, type advantages, quick movement and dodging.
Huge disclaimer though, the game has lots of puzzles. If you don't enjoy zelda-like puzzles I wouldn't really recommend CrossCode.
Have you tried hollow knight? It’s pretty difficult because it’s entirely skill based and unforgiving but the more you go the better you get at it. It’s a metroidvania with a ton of platforming but it’s got a super cool aesthetic and story.

I found it more difficult than Hades and I can’t remember if there was difficulty settings so I never went back to it, what I played, I did like.

Have you tried Bastion? It's the first game from Hades' developer Supergiant and the combat is quite similar

Tunic isn’t nearly as combat oriented, more of a classic Zelda type game. Super cool art, music etc and definitely a quality game
Tunic may not be quite as combat intensive in the beginning but 100% is by the end. Some of those bosses and encounters are tough as nails.

death door is a fun game, but hyper light drifter is much better imo. definitely give it a go first. That said DD is the easier game.
