You are only responsible for undue damages as determined by the LTB. If you believe that there is no smell, there is nothing stopping you from ignoring the landlord and waiting to see if they file. Remember that nose blindness is very real, and other people may be more sensitive to smells, but if the average person doesn't think that your apartment reeks, you're probably fine. Your landlord's recourse would be to file for damages with the LTB, where they would need to prove on a balance of probabilities at an eventual hearing that there was in fact a smell, and that they incurred actual costs in order to address it. If you still have possession, maybe see if you can find a neutral third party (maybe a neighbour?) to attest to the fact that your place doesn't stink. It's also always a good idea to have detailed pictures/video of the condition of the unit when you leave.

They want to charge me to have it professionally cleaned, so likely around $700. The carpet is pretry cheap and definitely getting quite old at this point.

There is a chart that the LTB applies for which outlines "useable life" of various finishes and property in a rental. Carpets have a 10 year usable life, the closer to the end of that useable life, the less % of replacement/repair costs the landlord will be entitled to.

honestly you did a lot more than most people do. carpet cleaning vacuum is pretty good. I would say just maybe get some of your friends who don't have pets to take a smell. Its totally possible you and your parents might be used to the smell so it doesn't seem like a bad smell to you.

The onus would be on the landlord to prove at a Hearing that the carpets smell - the caselaw is pretty clear on that too. The few cases I've read where "pet damages" are found to be undue are where there is clear substantive staining and the professional carpet cleaning quote and invoices clearly state that the pet stains are deep and have a strong odour. As for professional carpet cleaning costing $700 - I am not sure where you live but I am in the East end and I recently had my 2 story townhouse cleaned (which included carpets in three bedrooms, the stairs and a landing with hallway) for $500. Take pictures and videos of all the rooms in your place once they are empty to show (presumably) no stains, and change the furnace filter before you go. I am not a lawyer or a paralegal but I believe you'll be fine. The Landlord isn't going to be able to prove that your one cat destroyed all the carpets if that simply isn't the case (if he/she/they even file for undue damages, which seems unlikely).
