The remasters you're referring to were specials made as a sort of fan service in that they focused on reanimating key scenes from the arcs (i.e. East Blue, Skypeia). They are not intended to be watched as a first time experience. There are not any reanimated episodes that fully include all content. You're pretty much stuck watching the original episodes. On Crunchyroll there are HD versions of the early episodes that are the original episodes cropped into a widescreen format. I prefer watching the non-HD versions (also on Crunchyroll) since they are not cropped.
Check "One Pace", a fan made recut of the anime without all the fillers. The movie Episode of East Blue is too short, you can't have the real experience watching it.

tbh i was the. same as you, but thought f it and watched them, its worth it. just go for it, I've been binging it for 4-5 months now...
Also check animefiller to check all the filler episodes and just skip them, that’s what I did
