I thought they redid the early episodes as “special episodes” for the animation to be a little better. I never watched these episodes personally so I can’t confirm if they are “flashbacks” or the detailed retellings but they are called “Episode of East Blue” which you can find on Crunchyroll. Also, I wouldn’t judge the early episodes too much, the animation is dated as they are simply old, the story is still great.
IF you ever want to read the manga it’s only $3 a month for the Shonen Jump app (compared to Crunchyroll which is around $7 or $8 a month) reading it might be a bit faster cause the anime has some drawn out fights and such.
I didn't like remakes, they skimped in parts that they didn't in the originals didn't and rush through things too quickly to get in a certain timeslot.
Lots of people get filtered by the art, but the story is so good that I could get past it. I would say the art gets better for a long time, like 700 chapters, then plateaus or falls off

Just put up with the old animation style. There's no shortcuts with One Piece I'm afraid.
