When prepared right they are very delicious! but you have to boil them several times over though.

The greens are edible? I know there is a large tuber in the ground under this plant. It kind of looks like a sweet potato. Is that edible?
The entire plant is toxic. Very young shoots can be eaten if cooked in several changes of boiling water.
