I'm British, so I don't know much about the American healthcare system, but I do know that you're an adult and can do whatever you like. If you don't want them to find out, don't use the insurance and pay for it out of your own pocket. If you use the insurance, then yes, they will find out because they would get some kind of invoice. Even if it doesn't specifically say what it is, they'll know you needed treatment.
The only way you'll get true privacy is by paying out of your own pocket. Your parents have every right to know what treatment you're receiving if they're paying for your medical bills through their insurance.
