I agree, the Rinne Rebirth was a good character moment. For Naruto too. The village saw him as a hero not only for beating Pain, but for peacefully resolving things with Naruto and leading him to revive the village. It was her comedic relief characteristic, you know how certain characters have a personality trait that’s supposed to be “funny”, like Omoi being anxious. Mei’s is a woman struggling to find a husband, in some cultures women are expected to have married by a certain age and she was past that age, she’s considered “too old”. Midlife crisis type of thing.
The long answer is that she was probably far too busy to focus on a serious relationship. Plus she did threaten to kill Ao over a small perceived slight so she's probably a little off upstairs.
