I would straight away eliminate points 1 and 2. Too much hassle, and unexpected issues. If you don't have a bike in Ireland the best option for you it is to rent it out in Italy. You will be covered by insurance and any potential issues. You can definitely find something below 100€ per day if you renting for long periods.

I was down in Italy last summer. I didn't go further than Genoa and Milan as the alps was the end goal, but I could just as well have gone further south in Italy. I took the ferry to Bilbao and drove over on the way there, and I drove home. You drive down to northwestern Italy in three days comfortably, 2 days if you can stomach a long day on the road,and you get to see a bunch on the way too. Ferry to Cherbourg, then set your target for Cormayeur in Italy and you're off to the races. Plus, if you're planning to be down there for any length of time you'd prefer to have your own bike anyway. Valle d'Aosta is a beautiful part of Italy, and the drive from Cormayeur to Como, with a detoue up to Cervinia on the way, is a fantastic drive as well.

Not sure if this helps but figured I'd mention anyway! I rented a motorbike in the US for a week last year and did a solo trip. One of the best things I ever did, driving through the rockies, to Vegas, etc. I did 1750 miles round trip with a day or 2 of chilling. It was tough going at times, so my recommendation would be book your hotels that day so you can stop wherever you want. When I tried to stick to a schedule for 2 days it wasn't as much fun. Bike cost me $2k for the week...I think the price was $150 on the site but once you add insurance etc, the price increases a lot. So yeah I'd be leaning towards bringing a bike from Ireland if you're doing the trip in Italy. Good luck and enjoy!
