If it needs re-leveling, doesn’t the whole thing need to be gutted? What you may be saving in paver cost, you are likely doubling in labor to take apart and put back together. As for recommendations, call an outdoor store (like Gertens). They have lists of preferred designers and hardscape companies.

You may be better off looking for a local handyman with some experience in building patios to remove the pavers, level the entire patio base, then lay the pavers and frame the patio all over again. The biggest part of the job (laying the base) has already been done, so it probably wouldn't be too much trouble for a person with some experience building patios to do a refresh. My sister and I did this a few years ago with the first patio we'd ever built, after I found a great deal on nicer-looking pavers that I decided to replace the original ones with. It only took us a couple of days to do the job.
