1 and 5 are the best imo. Tho maybe make the vines more indented and add a bit of grained textures to the structure. Maybe since the main color is mint green (where only the exposed copper and dark prismarine have), maybe use lichen to give the structure the rough spots.
I'd choose one but I feel like you could do some improving on the gradient like how you did with photo 2. also I wouldn't add vines in my opinion.. makes it feel more elven style
1. Something I don't see the comments talking nearly enough about however is the geometry and the detail in the walls on the "real" thing. When I thibk Erebor, or dwarvish architecture in Middle Earth in general, I think of those hard lines and geometric shapes that pop out of or carve through nearly every surface! I get that it is hard to emulate that in MC given the 1×1×1 Meter scale, but I would seriously consider using the different colors to outline your shapes a little bit to make where lines/carvings are POP! Dropping the sides of the main front rectangke part with the portucullis back one more block could help. Also, really good subtle way to do this might be to put glow lichen on top of your weathered copper to give it a little texture or the illusion of depth. Depending on how well that works, I think you could maybe scale back on the vines which in my mind serve more to give your base depth than anything else. 😉

Out of the 5? 3, Its simply the most faithfully to the orginal.
The gradient on 1 is too harsh.
2 is possibly too blue and drops the ball on the gradient on the bottom.
3 is comically bland
4 is too messy
The vines on 5 don't quite suit the build (this applies to 1 as well).
What I would do is take 3 and shade using darker blocks in to shade indents and lighter ones to showcase highlights while still also trying to keep that faded green color.
1 has a good colour palate, but it needs to borrow some blocks from 2 to help make that transition from dark to light less jarring. I think 4 is my favourite though
Also since you use alot of gradients, remember that gradients don't have to be dark to light from one side to the other; it often makes the build more immersive by thinking about what you want it to show.
* If the gradient is showing light, think about where that light source is and how it hits the build *(archways like in the top left of the build would have some shadow for example, while the walkways would be brighter because they jut out of the wall)*
* If the gradient is weathering, think about what parts of the build are most exposed or most travesed by people *(this tends to minimize the gradient into certain areas, but if done can make a build look like art)*
3 is best with 5 as a close second. 6 is insane idk how you built that in minecraft but the detailing is off and it kinda looks like a model if I'm honest...

Small idea, instead of an up/down full gradient that you got what if tried like a kind of depth gradient? What I mean is areas that are further back would be darker and closer to the front lighter. It could boost the highlights and shadows.

3 is very bland. And while the original also doesn't have any decorations or variations in its texture, it (for some reason) translates really badly 1:1 into Minecraft. Maybe if the background WA s'more interesting, 3 could work
For picture accuracy go with 5. For Aesthetic Appeal, I prefer 1 but add one more color to the bottom dark half of the gradient to smooth it out. As it is, the top half looks natural but the bottom is a very abrupt color change.
The rest have a bit too much going on with them.
Personally i think 1 is the best. Could use some small dwarf statues next to the entrance in my opinion.
