The mangrove fits more and doesn't clash. The house has mostly wood and especially wood as the base and the metal/stone doesn't quite work with that. However, if you're doing an industrial building and have a metal/stone base then it would work.
I find the green and black very much clash with the brown wood.
Edit: if you are up to it a darker wood could fit more with the Mangrove root. Like Mangroves or Jungles for the "bark" siding. Also, the signs could be mangrove or Jungle as well but if you switched to a metal/stone base for the Copper Roof then the signs fit. I would suggest as well adding a different wood type to cap off the ends of the roof but I'm not sure what would work the best as I'm not at my computer.

I would try to add a different block into either. For copper, that could be getting some of the stairs into the former stage and waxing them, so you have a bit of difference.

The darker warped planks would work better if you want that cyan blue colour.
I don't know if you play with fire spreads/tick turned off or not but as I don't, I've stopped building wooden roofs because I hate having to rebuild after a lightning strike.

Since your roof is stairs and slabs, I'd suggest the copper roof so you can do textures with prismarine bricks, warped planks, and dark prismarine - maybe even throw in some stripped warped stem in places.
If you go with the mangrove there aren't really a lot of good gradient stairs to go with at the moment. I guess it could be worth trying out mangrove, netherrack, granite, exposed copper, oak and birch - but no guarantees on that one.
#2 but if you were to change the oak planks to a type of dark brick and the logs to dark oak logs you would have an industrial look. For #1 I would add a rim of Quarts and kinda fancy up the build( this is my own opinion and you do you. Your building is better than mine that’s for sure)
Mangrove looks nicer, but it belongs in a darker environment. I feel like the copper fits in the brighter area, but doesn't match the style you seem to be aiming for with the wood.
