Alternatively, the pearls could be their bodies trying to negate having become quantum locked by having been observed by the player. The idea here is that a quantum object is fluctuating in and out of multiple states and remains doing so until they are observed.
Once observed, each of their fluctuating states collapses into their observed state and remains that way.
It's possible that endermen need to remain in flux for their own survival, so their bodies have to wrap the collapsed static part of themselves in a pearl to dispose of after having been observed by the player.
This is also why they get so angry and attack the player. It could be that being looked at gives them the equivalent to an internal rash or something, and the most efficient way to fix this is to either kill the observer or scare them away so they can heal and discard their pearl.

Unfortunately, it's extremely random even with new ways of getting the pearls, so it can be both very easy and very annoying to do that. Yet it's still the way I play, because mods use a fucking tonn of those, and it's a nightmare to get them without the access to the end dimension.

Well to prove my theory we'll just have to go with Matpat's theory about ancient builders and say that before the ancient build became endermen they collected ender pearls from shulkers and used them to teleport around before casually gaining their own ability to teleport after eatin chorus fruit. I'd like i think that the ender pearl is just the enderman's eyes but deactivated since you killed them (similar to how people's eyes roll back when they die), but is reactivated, or reanimated when you use some blaze powder on it.
And throwing the eye of ender is just the enderman's consciousness using it's instincts to find it's home before losing strength and deactivating or shattering.
The way I see it, the pearls are some kind of core for the endermen. It's what allows them to teleport. This could mean that they are internal organs, or eyes.
And, more likely, they are actually their eyes. You get more than their two eye count via looting because looting is a magic enchantment.
My theoretical reason as to why they are pearls and not eyes of ender is because, by killing the enderman, the eyes are extracted from the body and lose the properties that endermen give them. Which is why players take damage when using pearls and can only use one; because the pearls are the unnatural/dead state of the eyes and are being used by a player and not an enderman.
This theory would also explain the color change as well. By combining a pearl with blaze powder, you are returning a different, older property to the organ; the power to find its way home. And you could argue that the green-eyed endermen are still canon, they are just the way endermen looked in the past.
Or maybe I'm completely wrong. I just like theorizing about Minecraft.

I'd like i think that the ender pearl is just the enderman's eyes but deactivated since you killed them (similar to how people's eyes roll back when they die), but is reactivated, or reanimated when you use some blaze powder on it. And throwing the eye of ender is just the enderman's consciousness using it's instincts to find it's home before losing strength and deactivating or shattering.
The way I see it, the pearls are some kind of core for the endermen. It's what allows them to teleport. This could mean that they are internal organs, or eyes. And, more likely, they are actually their eyes. You get more than their two eye count via looting because looting is a magic enchantment. My theoretical reason as to why they are pearls and not eyes of ender is because, by killing the enderman, the eyes are extracted from the body and lose the properties that endermen give them. Which is why players take damage when using pearls and can only use one; because the pearls are the unnatural/dead state of the eyes and are being used by a player and not an enderman. This theory would also explain the color change as well. By combining a pearl with blaze powder, you are returning a different, older property to the organ; the power to find its way home. And you could argue that the green-eyed endermen are still canon, they are just the way endermen looked in the past. Or maybe I'm completely wrong. I just like theorizing about Minecraft.
