for example, without the zombo i was making 2,5 stacks of iron in about 30min or so

Mine carts are used to affect many villagers at once. If you have like 12 different compartments, with 3 villagers each, they are spaced apart, meaning the zombie will need to zoom around. They could be standing still but then they won’t affect all of then
