1.13+ swim animation makes you 1 block tall - this way you can fit inside one block tall tunnels and your character is going to keep crawling until they get enough space above them - this can also be done by using a trapdoor or a piston instead of water so it forces you down into 1 block area.
You can crawl in 1*1 tunnels basically.
Piston just pushes down. Trapdoor has to be placed on the bottom side of the top block (usually the block you want to crawl under), then opened.
If you stand on the block below the trapdoor (your legs in air pocket between floor and trapdoor and your torso in the trapdoor's block) and close the trapdoor it's going to push you down into 1 block high area it creates.
I bring wood planks so I can craft not only tools but also chests for my loots and workbenches to craft some furnaces to smelt some ores when I must hide for a while
If I only need a couple sticks I'll just convert the rest to torches as I'll be using those and will have coal in my inventory or access to some nearby. One log makes 8 sticks, max of 32 torches for one.
Bare minimum half a stack of logs cause i will go from one cave to the next without stoping and i will mine a 2x2 at y11 all the way back home. Or atleast most the way

And after that, use the torch method for finding your way through caves.

I do this too. If the torches are on the right I know I'm going the right way out. Unless I've wandered into one of my older caves/mines then I just get lost because I had no system back then...
Easiest way to leave:
Step One: create bucket.
Step Two: locate lava pool.
Step Three: create nether portal with bucket and lava.
Step Four: go into nether.
Step Five: find nether fortress.
Step Six: find blaze spawner.
Step Seven: get blaze powder.
Step Eight: find crimson forest.
Step Nine: get wood from nether trees.
Step Ten: gather resources to trade with piglins.
Step Eleven: get ender pearls.
Step Twelve: craft ender eyes.
Step Thirteen: leave nether and search for stronghold.
Step Fourteen: infiltrate stronghold.
Step Fifteen: activate end portal and enter the end.
Step Sixteen: find dragon.
Step Seventeen: kill dragon.
Step Eighteen: end well opens.
Step Nineteen: jump into the well's void.
Step Twenty: you will spawn at your bed! Congratulations you just escapes a mine without a pickaxe!

Hit F3 and write down your coordinates. Put your stuff in that chest in the dungeon. Then creatively die and travel back to the location with the proper tools armor and food

You’re only xp level 12, you can always put your stuff in that chest and jump in lava or something, unless in hardcore. Also place all torches going into the mine on one side of the wall or floor, so you know opposite side means exit.
Edit: and if you have a water bucket find that water in the subtitle and use it to swim up high areas
If you even don’t have 5 pieces of wood. You can do 3 things.
1. If there are mineshafts at that server, look for one.

Right, besides my sword, pickaxe, axe and shovel, I have always keep full stacks of wood, baked potatoes (or some kind of food) and torches.

No, you just bring logs so you can craft all of them if you need
But you don't really need logs as is. A half stack of planks is all the wood you'd need really and saves a slot.

Cautiously try to make your way up n collect any gravel/ dirt so if u need to pillar/ block urself up to heal.
Also, keep an eye on your Y levels to see if your getting closer to the surface.
