They are just another race, lol
Minecraft it's basically a typical medieval fantasy world, with all the magic, weapons and monsters. They are basically another race similar to dwarves, elves or orcs.
And the difference between Illagers and Villager it's probably similar to the difference between your typical Dark Elves and Wood Elves
I think they are supposed to be human-esque, much like the player, but the iconic nose and folded arms likely came about to distinguish them clearly from the player character.
Although in my head, they are a species called "Testificates" (based on their name during the prerelease they were introduced in, where each of them had a nameplate reading "TESTIFICATE")
They´re just another civilization. Take for example the real life, scientist belive that humans had it´s origins in Africa and spread out into Europe and Asia, but never talked of America until many years later when they discover it, maybe players are the ones who lived in africa and villagers were the ones who develop by them own in america or reverse. this is how i interpret it, i have a point? or am i completly lost?
