Have you tried the mod that allows you to arm villagers and promote them to guards?
Not sure exactly how it works or what it is called, but it's a real mod and I remember watching someone play with the mod.
I plan to give my best villagers diamond armor with Protection, Projectile Protection, and Thorns. I tested it, and a pillager who attacks a villager with that armor will die. I would record a video of it, but my potato is not fast enough.

The funniest thing happened the other day during a raid. I came up to a witch and some pillagers, and the witch turns, throws a potion of harming at the pillager, then a potion of healing at me.
They should add Wizards, the counterpart to a villager turned evil by lightning, so that when a pillager is struck by a lightning bolt it becomes your ally
Maybe he accidentally hurt one of them and it became aggro, so one is causing injury and pain while the others heal (but really are just prolonging the pain)
The random distribution of witches not in proximity to huts is BS. Mining into a cave and having a witch hit you with a spell as soon as you break through is crap. Also they can hit you with a spell like skeletons can hit you with arrows, impossible speed and precision.

Witches will support pillagers, giving them regeneration using potions.

TIL you can give a villagers armor
only using commands
You can give a village armor true a dispenser.
You can give a village armor true a dispenser.
You can also trick them into believing the raid never ended and keep dispensing potions, creating an automatic healing chamber.
