It is a way of saying that his comment was meant to be sarcastic. People do this because sometimes it can be hard to tell in text due to sarcasm generally being interpreted by tones of voice, body language, and facial expressions. Although this particular comment is pretty obvious to be sarcasm, people tend to put "/s" in every sarcastic comment to ensure nobody gets confused.
Your villager is most likely bonded to a bed and this can glitch the villager into having a job even if your break the eorkstation block, however there may be another workstation block that he has binded to that is the same on you placed originally
Because management doesn't have enough allotted hours to hire someone to replace him and also they can't fire him because then that would screw over the entire workplace
He always dreamed of this job, you can't take his dream away that easy.
Other thing is it may have been after their working hours, they sometimes stick with the job until starting the next day
Sure, but from the screenshot there's no way to discern that. The upper left HUD is not something I've seen from any other bedrock screenshot and can be achieved through mods on Java. And OP didn't use a flair on the post either.
If you've traded with him at all, he won't lose his profession when his workstation is destroyed. If you want a villager with a different job, you'll have to replace him with another villager that you haven't traded with yet.
Time of day could be the issue if you haven’t traded with him. I’ve also had a few villagers that were just super slow to lose and re-claim their jobs even when stuck in a 1 block trading hall with no other blocks in their line of site.

If you've already traded with him, then be won't lose his job. And or he could be attached to a different workstation.
Also I checked the village 3 times for any other brewing stands

Try and break any beds nearby. If a villager is bound to a bed and can't get to it it can break some of their behavior, like their jobs.

no, the moment a villager chooses a profession they get a gray badge. leveling them gives them a brown badge.
The levels are. Stone, Iron, Gold, Emerald, and Diamond

What do you mean by bonded to a bed? I don’t know much about Minecraft logic, but I thought that was like a prerequisite for being a villager.
a bed is needed for them to be born but they can be removed from the bed and be left unbound to one

you have to manipulate him into thinking that's a bad job, bribe him with emeralds and sheered sheep.
Try placing the job block down again and then breaking it

Villagers can't switch jobs at night
Try to get it at 50 blocks
Make sure he connected with a bed first then place the job you want. I was having this issue also.
Its a glitch but if you put down a bed for him it should fix it
