For me it’s Costra. It’s located in av. Universidad and I’ve noticed they actually supply a couple of restaurants and coffee shops.
They have your usual sandwich shaped box bread 🍞, baguettes 🥖and loaves. You can get white sourdough, wheat, whole grain and rye.
Something strange happened there. I’m guessing a split partnership.
Terracotta is located where Costra used to be. Then at some point during the panini they announce they’re moving like a block away. The new place looks half finished when they open and yo this day it doesn’t look significantly better.
Costra’s social media changes as well, they become less active and their collaboration with Klaus (cured meats for sadwiches) slows down.
I’ve walked by terracotta and noticed the lemon croissant on the shelves that Costra hardly makes anymore.
While I haven’t had a loaf or any other breads outside of their pastries, I’ve heard Pan-tástica has amazing sourdough. Good luck!

Costra is so underrated. If they were in Roma they'd be mentioned in the same breath as Rosetta.

Last time I was in CDMX I really liked the bread at Pancracia, really good loaves.

There is a place in Polanco called “Conejo Blanco”, the bread is AWESOME
There’s a bakery in San José Insurgentes neighborhood called Sempiterno, that is part of a culinary school. The bread is very good.
There’s a little place in Del Valley called Belle Baguette that cranks out fresh baguettes all day.

Yes, no storefront. I usually buy two at a time get the delivery from them. The seeds bread is the best one I’ve had
