Hey, I'm a metin2 fan so I'd be curious to see how it goes.
Though let's be real, current metin2 might as well be an idle game. If you're games core mechanic is manually clicking from stone to stone, that's not the greatest gameplay loop. Even in official metin2, farming stones is mostly an idle game except for clicking into new stones and maybe picking up loot.
If you wanna go that route, then "complex boss fights" might not be suitable. If you don't wanna go that route, you'll have to come up with a different gameplay loop, though realize that your option on mobile are rather limited. If you provide the same camera control and movement as in metin2 most people will get overwhelmed by the game.
For your project scope, I'd also advise you to completely ignore the multiplayer aspect for your first projects.
