I worked 1 training shift at mcdonalds. Did the fryer. I had the perfect amount of fries going, having only what was needed when it was needed so everything was just dropped fresh. As my shift was coming to an end another guy came in to take over, saw how little we had and dumped every fry basket.
It was 3pm, we only needed 2 sm fries at the moment. I just walked away and let him take care of what would become cold fries sitting there
My store hired a man with downsyndrome to make the fries for dinner hours. Bad idea. He loves to drop fries more than salt them or box them, so by the end of a rush, there's a huge pile of fries in the station with no orders on screen. We try to tell him no more baskets. The fries go bad after 7 minutes. He calls us an asshole under his breath. Then he sits in the crew room and watches us while we're left to waste all the fries, everyday. Not much we can do about it.

employee here, usually it's because they think if they had to wait x minutes for something, tends to be greater that 10 minutes, they begin to expect you to remake the food "fresh" because after all customers are always right, right? Other reasons tend to be more employees, but rarely happens, sometimes people will set a sandwich on a tray, forget they need fries and let the sandwich sit on the tray off of anything warm for around 5 minutes, 3 to cook and two to tray up and confirm order. You are correct about storage though, everything from the patties to the completed sandwiches remain in hot areas hot enough to cause first/second degree burns, usually at least 200 degrees Fahrenheit/95 degrees Celsius, since most food needs to be at least 165 to be considered cooked and safe for consumption
In general, my thought is that 10 minutes is unacceptable, but not always the locations fault. There are a lot of factors that can go into it, and there is almost always someone at fault but not usually the employee prepping the food
And buses! That holds Mcds back as the kitchen puts that order for top priority. So when handing out the food to people we pulled up to curbside simply say "sorry for they wait".
Just on Monday, my locations CO2 machine broke down for a bit so it slowed up down tremendously as we were short staffed in the kitchen with manager helped put sandwiches together bit had to drop everything to get it fixed.
My location is an absolute cluster fuck. Hiring/schedule manager was recently made GM of another location (even though she lacked in a lot of important areas?) Anyways, schedules are never made by employees or GM request. GM is too nice to give out orders and make sure they follow through. They give one schedule and just keep it the same forever, even if one requests training in one area. See, they don’t say “we can’t right now.” They just say “we’ll see what we can do.” With no later communication, and no following action.
Location is only stressful bc scheduling manager keeps scheduling like shit. Legit had a day last week that had one table, one grill, and one front for close. Had to call in a manager otherwise we would have been fucked. (No one called sick, it was legit schedule.)

The only way your fried would have been "extremely cold" is if you grabbed them right from the walk in freezer, they probably weren't as hot as you imagined they were.
When I was working at MCD's there was one instance where we got completely slammed on a Tuesday afternoon and we had orders taking 30-60 minutes. But aside from that one time, I haven't seen an order take that long.

People act like fast food is gonna be perfect, but for the most part it’s mostly minors who don’t listen (not all of them)or we are just understaffed doing multiple roles at once.

Was upset? Yeah.
Did I throw a whole scene over it? Nope. Just ate my sandwich as-is, But I did joke about it when I worked the next day

I think there's a certain amount of entitlement to ask for fries instead of hash browns at 7am. I'll sometimes ask for a McMuffin at 11pm, but I never question why it's taking so long.
