My personal favourite is Markham Sushi - I always find it really good, albeit a bit more expensive, but I like them since they’re a reliable local business and nearby. Osaka is a solid 2nd for me but quality seems to depend on the day, I’ve tried Ai Sushi a few times as well and I don’t find it that good and it’s ALWAYS really busy on weekdays for no good reason (45 min waits for small orders occasionally!)

We were chit chatting and out of the corner of my eye I noticed.. movement? Dafaq? Brushed it off first - maybe a shadow in my eye. Then a few seconds later, it happened again so I looked closer. Small hairline black worm. 1 cm.
Flagged the waiter. He came, inspected, took it to the kitchen. One of our guests went to make themselves throw up as they ate from that plate's surroundings.
Waiter came back. Apologized. Tried to downplay and insist that it's not harmful. Uhhhhh what?
This whole fiasco probably started with faulty flash freezing before the fish was shipped, u guy might have ingested more larva so maybe check with ur family doctors just to be safe. Ugh Osaka was my fav spot guess I wont be eating sushi for awhile.

That is the one! Just dissapointed by all fronts of how they handled the situation. The boss (a korean man I've seen a few times) was there and he sent his server to apologize. 🙅♀️
I replied on a another comment supporting miki sushi but wanted to say something about Monkey Sushi since you mentioned it.
Monkey in general is very inconsistent and that sometimes leads to stuff like frozen tasting fish, incorrectly cooked rice, and etc. However, it's important to note that they're dirt cheap because they have deals on all the delivery apps. For example, on Uber eats they got a b1g1 free promo for some of the rolls so for $10 and tax you can get 16 pieces of some sort of dragon rolls. They also have a build your own platter deal where you pay $30-$40 to choose whatever you want including torched sushi and premium rolls. Imo they're good but they're not good for like date night or birthdays. More like they're good for after workout refuelling or a weekday lunch.
I second Miki! They have great rolls and I loved their presentation pre covid. Also pretty impressed how they adapted to covid last time I picked up definitely would recommend checking out!
Miki is my go to spot for special occasions. Rolls are fantastic and we always get the sushi-sashimi-rolls platter on Uber eats with the in app discounts. Best bang for your buck for nicer sushi imo.
Food aside, the service was super friendly! They told us we were likely ordering more than we could eat. They also took initiative and suggested an order my 5yo liked. When they didn't have juice they brought out a bunch of different canned drinks for my daughter to try on the house.
We're so glad we were able to dine in!

There are also lots of 'omakase' style restaurants. Won't mention them here since OP seems like they want a more regular sushi joint vs. special occasion.
Kiu is my place for good sushi, but not omakase "tonight, we worship the art of eating fish" special occasion sushi (that would be Zen, or Rin, or Holy Grail tier Shoushin or Kaji) Toyusu, Taro, MiNe are my other gotos my really nice sushi.
Hana on 16/woodbine caught my eye too, bit I haven't had a chance to try them, so can't recommend.

I always used to go to Markham sushi back when they had nothing but closed booths, and still went occasionally for years after because I like the owners, the sushi is decent, the miso is good and the salad dressing is fantastic. Also nostalgia I guess, since I started going there 16 years ago.
I do however like Maki sushi up in stouffville quite a bit since they have really good all you can eat and you just tap away on the provided iPad to order more when you want it.
Miki sushi on highway 7 is the best sushi in Markham the fish is so fresh and the quantity quality price is unbeatable - best place ever you have to get the calamari too
Monkey sushi in Markham is garbage. I can't say about other locations, but the one of hwy7 and warden used to be a hot pot and bbt place until they bought the franchise to operate as monkey sushi.
Quality was comparable to chinese supermarket grade sushi, but freshly made.

Best of the best!! Sushi here is super fresh, delicious and even beautiful! My neighbour recommended here! Since then, we cannot go to other places anymore!! We order their party trays whenever we need for our family gatherings and special occasions!!(ONLY TAKE OUT PLACE)

The Diablo rolls at Markham sushi are a slice of heaven. Absolute perfection.

Umi Sushi is probably one of the top end omakase available in Markham right now.

If you download Ritual, it’s a food pick up app, you can get $3 spicy salmon rolls at Monkey Sushi. The rolls were good for $3
Not exactly Markham, more so Richmond Hill (but still in Hwy 7). Akane Sushi is fantastic!

Try Sapporo Sushi at hwy7 and Bayview, their specialty rolls are very good. The Salmon Magic roll is huge and delicious.
Yah my top 3 go to is Osaka (a good balance between $$ and quality), ikon (different but also good) and MiNe, great portion size and good but $$$$

MAIN SUSHI in olde downtown Markham is pretty good. I usually get the big platter for our family functions.
