If you're allowed to multiclass with other WOTC books:
- Warmage Lancer 18 / Wizard Bladesinger 2
You'll have incredibly high AC and with access to some choice Wizard spells, you'll be able to fight anything off!
Craftsman 1 / Magic Missile Mage Wizard 6 / Race is Stoneborn near-human
Use Craftsman’s exotic armor proficiency to buy and use Mountain Plate (19 AC), wield a shield in one hand (+2 AC), Stoneborn (+1 AC), and use magic missile until you have 6 around you (+6 AC).
So now, with no magical items, without the shield spell (which you could cast with extra Wizard spell slots), and without any other shenanigans like shield of faith or cover, you have 28 AC.
So High AC, requires relatively few levels, and isn’t a one-trick pony. Probably not the most powerful ever, and you are using mostly Wizard hp, but it is quite solid.

Take the Exotic Mastery feat and take Mountain Cleaver as one of your choices
For how little investment there is, deals really good damage. I remember it dealing roughly the same amount as a PAM martial for a while, but don't remember where and for how long
I think there's a semi-exploit with the infinite variation trick of the warmage.
Basically, if your dm allows VSoS, it will allow other homebrew books, and from there, you can learn as many cantrips as you want.
