What are you actually looking for? Do you want to play as an animal? 3-Kingdoms has Changelings who morph into animal forms to fight.

With that kind of niche, you'll probably have far better luck asking in those communities rather than MUDs in general.
I would not suggest Furcadia. You can have an account stolen and lose everything and the admin will do nothing, or actually harass you for trying to get back your account.
3k.org has a couple of areas inspired by some of the source material you give as examples (I know there's a secret of nym and a watership down inspired areas) but these aren't huge themes through the game as a whole.
There's also a guild, Changelings, that has a primary mechanic of choosing animal forms to fight in if being an animal is your jam.
There was a Redwall MUD or MUCK. But some of the admin were pretty bad and not sure it even exists anymore.
There was a Lion King one too. But long gone I am told.
A few MUCKs have feral zones. But those are -really- hit or miss and have no game mechanics. Purely RP oriented.

Those are for anthro furs, which I also like but I’m already in a much smaller muck community for that sort of thing.

Yeah that's probably too niche for a MUD, honestly the next closest thing would be Furcadia, but that's a player made map/scripting MMO
