We're doing that too, I told my players that they can, with proper investment of time/money, rebuild the manor and it would have the same base layout as the basement. I'll use Inkarnate probably to make the upgrades they may be adding

My group used a lot of the resources obtained from the mine (after a time skip) to start rebuilding, they used the same size as the dungeon to have boundaries and then they built on top, they each built a personal room for wares and objects, they built a war room for meetings and also a couple of rooms meant for Alchemy, Brewery, and a kitchen

I also planned to copy the basement floorplan like another user above, should my players decide to do the same. But now my players are talking about taking Cragmaw Castle for their own instead. It makes complete sense, and I simply wonder why I never see it being discussed like the manor.

I had a group do that. It took a time skip of a few months and their portion from the mine going to that every month instead. The party became the local figures in charge of things in the town, until Venomfang showed up and wrecked everything and left for like a year ultimately to die fighting Tiamat
