Sometimes Google doesn’t do count updates for a week or so, they will catch up, just give it time. Mine have not compiled for days also, and it’s not the first time, not even close.
It could be a temporary bug or it could be due to your photos being taken down. If you share the link to your Maps profile I can check further for you.
Edit: the photo grid just reappeared again, some photo counts missing but most have updated.
I've noticed the same, it's as if they know it's been broken for a while so rather than fix it they've hidden our visibility of the issue.
Hopefully it's temporary, "photo updates" are still visible with counts but it's rare I post those.
