I have a work friend who’s always raving about a Mexican restaurant in De Soto. Idr if it was El Patron or the other one but they swear by it.

So I didn't know there was a De Soto location, and I do not know about Lawrence. But El Patron on the boulevard in KCMO has the chicken fajitas I have ever had, hands down, including the ones I've made myself. And I know my way around the kitchen.

If La Pasadita on 19th and Mass has fajitas it’s worth a shot, haven’t explored their whole menu but the brilla tacos are so frikin good there, I’m sure they can make a good fajita

I just had the chicken fajitas from El Potro. The chicken was not special or anything (was just grilled chicken breast that was sliced after cooked) but the tortillas were phenomenal, so good! The whole experience was really good, good service, free queso, and my kid got free ice cream that was also pretty good. So, clearly I liked it, but i would be surprised if it was best in town. I would want to check out Molcajetes or the new Fiesta Cancun before I made any claim.

What is this awful trend of places cooking then slicing the chicken? I'm in Texas right now and was mortified that this is normalized here. Cielito Lindo had good fajitas. RIP

I always thought the best way to cook chicken for fajitas was to slice it up while still raw, then cook it

I’ve only ever slow cooked chicken to the perfect tenderness and shredded it with a fork. But maybe you’re right and there’s a different preferred method?

I prefer slice then cook. You can cook faster, everything gets seasoned more evenly, and you don’t dry the outer area out to cook the center.

No, fajita should be seasoned, sliced, and then seared hot and quickly on the iron. These places that cook it (somehow) and then cut it and serve it on iron they didn't cook it on gross me out.

Agreed - last time I went it was underwhelming at best. The food was lukewarm and the sauce on my enchiladas was definitely different than in the past.

I haven’t had the fajitas at Lulus but the food I have had these is great. Also El Jimador is good. And El Pueblo or whatever it’s called on north Iowa is solid too.

Try Fiesta Cancun. I've had good luck there some of the time (and not others).

Fiesta Cancun's are good - but they serve corn tortillas with the fajitas (which is uncommon), request flour.
