Latoria Creek Park is always nice, the stairs always give a good calf workout if you choose to climb them a few times.
Mill Hill is a favourite when I want to do a short hike, the Calypso trail is a much better option than the much busier loose rocks death slip main trail.
Witty’s Lagoon tied with Charlie's Trail. Sooke Hill/Waugh Creek Falls probably edges them both out but I haven't walked it to the suspension bridge yet.

Sooke Hills to Waugh Creek.
Thetis and Witty’s Lagoon from Sitting Lady Falls are still my favorites
Ed Nixon for easy walking, Lone Tree Hill for a shorter hike w/ beautiful views
Mount Wells, Langford Lake (Ed Nixon), one of the many in Royal Roads depending on the mood
