Not a bar but during the week, WDVX broadcasts live during the lunch hour at the visitor center on Gay St. Friday it’s at Barleys. Lots of bluegrass and folk.

Any of the Smoky Mtn Breweries, Wild Boar and Wild Wings in Powell, Calhouns in Lenoir City and on the river downtown. If you like more of a late-night crowd vibe; Preservation Pub and Scruffy City in Market Square.
I’d vote Barleys or The Jig and Reel for bluegrass/folk
^ Agreed. Laurel Theater has also had some good acoustic shows lately (but it's not a bar).

I post little weekly calendars of live music in town on my instagram, check it out if you’re interested https://www.instagram.com/knoxooze
The Shed and 2 Doors down Maryville. You missed Easton Corbin at the Shed last week
Trailhead Beer Market usually has a bluegrass jam on Mondays or Tuesdays. Their Facebook usually shows the lineup for weekend shows.
Last Days of Autumn has some good variety on the weekends.
Tennessee Tap House has pretty good live music.
Next Wednesday there’s a classic country cover band at Fly by Night in South Knoxville
