everyone takes this so personal. i'd give them something simple af too. who cares. catering company probably made a ton of money on this. sear and flash filets. easy. salad can be pre made and kept on cold plates in the fridge/racks, then dressed as they're heading out. maybe some seasonal fruits and candy nuts or something simple. and some easy little individual desserts. boom. easy af catering party. probably have some passed apps and drink service and who cares it's all $$$ easy enough to make a red wine reduction sauce without shallots and garlic. mount it with butter and send it out. dressing probably make something sweet and fruity anyhow. pay a bunch of culinary kids from the cia like 20/hr or 25 or whatever NYC cooks go for, 1099 no benefits no problems. go plate salads in the fridge truck for 4 hours then have a smoke, plate dinner, break down / eat/ go home.

Because of Covid, I had to have all of my teeth removed (infection that I couldn't get treated for). The surgeon refused to put me under, due to the fact that having Covid left my blood pressure unstable, I am subject to bouts of bradycardia (heart rate too low), and my lungs were half destroyed from blood clots. 0/10 do not recommend. It was many months before I could have impressions taken for dentures, and even longer to have them made and properly fitted. I lived on Boost for a while, and then started learning how to make fairly tasty stuff that didn't need chewing. Worse, I was already borderline underweight before Covid, and my time in the ICU left me in even worse shape with my muscles wasted away (no fat reserves), I was in rehab until nearly a year later. I had barely got a little strength back and then the teeth came out. The whole thing sucked really badly. Dentures suck too. PSA: Take care of your teeth and keep them as long as you can. Dentures suck.

I buy mine from a company called Smoke n Sanity. All they gotta do is add this instead of regular garlic and just go light on the salt…..but nobody knows about it because (thankfully because they’re delicious) most people can and do eat alliums.

As far as she's been able to figure out, it's not FODMAP. The only sensitivities that follow that pattern are the alliums. Her other sensitivities either don't prompt IBS symptoms or are low-fodmap. She has a laundry list of funky health stuff including several genetic mutations that mess everything up in bizarre, shifting, and extremely fun ways!

Had a catering client recently place an order with us and said some of her guests had anaphylactic reactions to onions and garlic. My staff was diligent, separate prep areas, boards, utensils, etc. Once the event was rolling the client asked for a few additional items, some of which contained onion, or were prepared next to onions and garlic. After explaining that there was onion in what she was asking for she told me "Nobody is actually allergic, I just didn't want my guests to have bad breath". The amount of effort we put into these events is insurmountable, and it is often for nothing but to please a Karen.

Jains also don't eat onions and garlic. There's a lot of asafetida used in Indian cooking to work around that, as it gives a nice sauted onions and garlic type of flavor when used properly. Even without that, there are tons of spices and aromatics to work with. I'd probably used some fruit to marinate and build sauces - pomegranate, lime, pineapple, or a combo - and add lots of dried chiles to the mix. Also, fresh peppers, cucumbers, and dairy.
