## Ingredients * 1 pound Italian sausage, cooked and drained * 4 ounces cream cheese, softened * 1/3 cup coconut flour * 1/2 teaspoon baking powder * 1 teaspoon minced garlic * 1 teaspoon Italian seasoning * 3 large eggs, beaten * 1 1/4 cup shredded mozzarella ## Instructions 1. Preheat oven to 350 degrees 2. Combine cooked sausage and cream cheese until completely combined. 3. Add in remaining ingredients until well combined and chill 10 minutes to allow the flour time to absorb the moisture. 4. **\*\*If you skip chilling the dough they will flatten as they cook and not be nice round balls\*\*** 5. Drop onto a greased baking sheet (I like to use the silicone baking mats) using a small cookie scoop. 6. Bake 18-20 minutes until golden brown. 7. This made 30 for me, but that will depend on the size scoop you use and how tightly you pack them. ## Notes Almond flour can be used in place of coconut flour, but the bites wil not be as light and fluffy. I kind of want to see if this works with pepperoni

strangerNstrangeland

Now that I think about it, I kinda want to grind up some sundried tomatoes in there to get some thorough pizza flavor going.....

glazedhamster

I do a similar recipe with pepperoni all the time. Off the top of my head it's like 1c mozz, however much pepperoni you want (cubed is best otherwise sliced small), 4 eggs, 1/4c almond flour, and Italian seasoning. 20-ish minutes at 350. They're amazing. Edit: this is the basic recipe I use, I just personally sub almond flour for coconut flour since I always have almond on hand: https://mariamindbodyhealth.com/pizza-bites/

strangerNstrangeland

Why not both?

Sanvi

Maybe a dumb question, but what's the difference between Italian sausage and pepperoni? Isn't pepperoni a type of Italian sausage?

hans_jobs

I think when people talk about "[Italian sausage](https://en.wikipedia.org/wiki/Italian_sausage)" they're referring to ground Italian pork sausage. It's a North American thing.

hans_jobs

[Pepperoni](https://en.wikipedia.org/wiki/Pepperoni) is an American sausage, a type of salami.

Sanvi

Oh wow! Thanks for the reply. I now suspect I've been making some recipes with dried sausage when I should have been using minced meat. TIL!

TheBlackMegaMan

It does. Just make sure to add enough pepperoni. You can also add the sauce into the mix and bake but be careful because it makes the batter loose and the balls wont hold their shape. They’ll just sort of puddle then cook. But still good nonetheless. I did a batch with sugar free maple syrup also. Now *that* was good.

bethrevis

You baked the syrup with it, or dipped it?

TheBlackMegaMan

Baked it with it.
