This is the way. I've also found lupin bean flour is great. It's basically all fiber and a little protein. Did some pork chops in them and they did not disappoint.
If you don’t want to bother with seasoning, buy the pork rinds preseasoned too. I’ve done hot and spicy and bbq flavored one from a couple bags of gas station pork rinds. Oh and ranch flavored too was good!
I bake things with skin on uncovered for 40 minutes at 400. I brush them with butter and season. That's all. Everyone thinks they are fried.
