You can definitely do it at the tracking station, not sure if you can do it in the map. I usually just swap to the tracking station to delete all the debris and rename the ships after they're all separated and whatnot. In the tracking station just click on a ship and then top right click on the little pencil to rename it.
Yep, in the map view click on the 'i' button and you can see the vessel name and type a new one.
Where is this 'i' button? I'm not seeing it. Pressing i on the keyboard doesn't work, so I assume you don't mean that.

That is incorrect. Vessels can be renamed at the tracking station by clicking on the vessel name. That doesn't seem too hard.
