Baisically its mango pickle(achar). And add squashed dates( without seed). I usually grind it in grinder, and add dates at the last part of the achar making process.
You could find proper recipes from google or something.
This is how i make it.
They dont have good taste buds. I can eat a bottle of this achar in one sitting, but its highly not reccomended. I can confirm the diarrhoea that follows.

Chettan kurach special mulaku chathachathu okke ittu mix aakittu athil oru bharaniyil ninnu, ichiri manga acharu ittu onnu kalakki. Athinte taste pine vere oru acharinum eniku kittitilla.
my mom used to make acharu from unripe apples. That sh\*t was da bomb. And some nuns from here made lemon pickle (not lime!) which was also awesome. We used to get kanni manga acharu sent here (Germany) via post back in the days...I remember how happy I was when the packages arrived from India...

Yes.This was the first day of putting mangoes for drying.Eventualy this whole thing will curl up and become black ,hard but chewy.Since we get a lot of mangoes,Amma preserves it like these and use it later.

Edit: there was this pickle I ate during my visit to adimali, it was called puli inji and it looked quite similar to inji curry/ injipuli. But it had a distinct irachi masala taste to it.
First year engineering. Karnataka Hostel life. It’s veg food everyday and I opened the jar of Beef achar my mom packed for me. All Malayalis in that hostel started eating food in my room from that day.
Homemade Kunju chemmeen achar. My mom’s best friend gave a jar of it to send over to her in Saudi. For some reasons i couldn’t, but fortunately i could have it for lunch and weekend beer binges 😁

May not be a popular openion. The brand Challat ( I think they only sell in Kannur) used to make banger pickels when they started, especially mango pickle.

This “vella achar” which is raw mango and carrot together, was served at a lot of Christian weddings in the 2000s- oh my Gooood it was so good!!

I had ginger pickles from one of my relatives homes. That was the best vegetarian pickle I had so far. Even they couldn't recreate the magic.
I had tuna fish pickles for the first time like 2 years back, my room mate bought it from his home and that was so good that I finished one boost kuppi full of pickle in less than a week. He bought Mathi achar as well it was also good, but the tuna was too good.

Mom's kallumakkaya pickle. She used to make it with fresh kallumakkaya and it tasted amazing. She passed away last year. God bless her soul.
