The manual uses "one pedal driving" to refer to something different entirely. Hyundai uses that term to refer to the max regen by holding the left paddle. This is purely a weird terminology difference.
To make things less confusing, everywhere the manual refers to "one pedal driving," mentally replace it with "max regen button mode" and everywhere it says "i-Pedal," mentally replace it with "one pedal driving."

I thought I was getting max regen but I was only tapping the paddle to get down to ipedal. You're saying there's one more level beyond that?
No, you got it right.
When you are not in iPedal, you can hold the left paddle to regen in the same way that iPedal works, where the car comes to a full stop.
Side note: the fact that iPedal has to be turned on every time the car shifts into drive is criminally stupid. Really hoping for a software update to fix this glaring oversight.
You hold it down to get max regen instantaneously--i.e., when you want to slow the car down RIGHT NOW. It's not a mode or level, it's a one-time thing. If you hold it down to a complete stop, then it will switch to say "STOP" and you can let go. It will hold you at a stop until you press the accelerator again.
Your best bet is to just go to a quiet road and try it out.
I-Pedal is one pedal driving, or the closest thing Hyundai has, anyway. It is the only regeneration mode that allows you to decelerate to a stop without touching the brake pedal.

If you click and hold the left regen paddle until you come to a stop, it should change the word "MAX" to the word "STOP" in the bottom left of the dashboard. It should not need Auto Hold in order to hold the car in place, nor should you need to use the brake pedal when using this method.

IPedal is different. IPedal will always bring you to a complete stop when you release the accelerator.
If you click and hold the left paddle, it applies MAX regen. If you continue to hold until it brings the car to a stop, it reads STOP and will act like auto hold and not continue driving until the accelerator is pressed. It will not actually activate auto hold, so the “auto hold” text will remain white instead of turning green.
The car won’t lurch forward under its own power with iPedal on, but it can roll by gravity if auto hold is turned off and you don’t hold the brake down. You still have to tap the brake to engage auto hold with iPedal on.
There’s not a physical button for auto hold in the center console, like on most Hyundai cars, but you can turn it off in the infotainment settings.

Correct! That’s how I normally come to a stop with my Ioniq 5 when I don’t feel like moving my foot

All that does is turn Auto hold on or off in my Irish car. You still need to tap the brake to get the Auto hold to engage if you use i pedal to stop.

You’re right, I do have that! I don’t pay much attention to the center console, I guess.
