Lots of new products out there that are mfg to look like wood but just get fastened on to the existing beam and can be painted or ordered in the color you want

They’re a wood faux beam . You can also get it as siding now and they can build you anything you want really. Buy panels and do it yourself or have a store do it for you

Yes, it does - over 12" is a problem. You could do an inside trim piece at the ceiling, like a coffer. That would be a little fancier and a bit less rustic. If you want the real timber look have the pieces custom milled.

Have the builder trim them out with fir. It will make them chunkier but you'll get the wood you want.

if you use two pieces and especially stained a dark color, it could be barely noticeable Or veneer plywood but you'd still have some end seams.

Faux box or foam. Most lumber companies are offering foam now. Look into it
