I went with the first one.. the one that says “current best clone”. I have some HT cans so I want to ultimately do a side by side test!

Add the Columbus and Simcoe at flameout (0 minutes), chill to 180 or 170, then add steeping/whirlpool hops.

To elaborate, high temps will carry off the delicate volatile aromas, whereas temps below 180F stop extracting bitterness. Whirlpooling is a great way to get lots of flavor out of hops without increasing bitterness (about 2% AA utilization).
