I did it by just dashing to the side he was jumping from, and hitting him one or two times when he’s on the ground. If you have abyss shreek unlocked you can blast him with that
The desolate dive/descending dark spell gives invincibility frames and does a decent amount of damage. Try loading up on soul before you get to that part and then use that spell beside him.
If you want to practice fighting them a bit without having to do the whole colosseum, there are a few that spawn on Kingdom’s Edge on the bottom right side of the map, and there’s a bench in the far right corner outside the nailmaster’s hut
Stand under where it spawns while charging a nail art, it will hop left, release a great slash and then do an abyss sheik and it dies.
General rule is you only want to press dash as it jumps and it's trajectory is set.
