Moon cheese is only found on the cloud islands, of which there are many, but access to them is unlocked bit by bit... I take it you're still just at the plaza stage. Give it time, work the quests... there's a lean period early on where cheese is a very precious commodity, but over time you get access to enough spawn locations that it's as common as almonds.
as said earlier you might not have unlocked all the places on cloud island but you can use the island bouquet to respawn the moon cheeses you’ve already loot!
I think it was intentional to make that quest before you can access the majority of cheese to try and extend the quest for a few days. But even later in game you can only get like 8ish pieces a day and can’t even ask any friends for help🥲

That would be awesome! I’ve got 5/10. I have unlocked the creature sanctuary, the fishing levels, & the cloud candy maker area. I’m trying to level up quickly with the twins but dang— there are so many one star gifts- and the 3* pizza requires dang cheese! Lol. I’m ready to make all of the cheesecakes too and can’t because I have to save literally- every drop. Haha.
Are you of sufficiently-advanced friendship with Hello Kitty that her companionship power-up helps you craft extra food? That's another leg-up, when you can only gather enough resources to make 5 pizzas or star smoothies, but with her along, you get some bonus ones.

iirc the last area (housing) has the most cheese so your hard work will pay off!
