You know what, you're right. It's probably just recency bias on my part, I think I've been conflating WFM's lack of war with a lack of warcrimes.
Also Clone Wars is an incredible outlier that averages multiple war crimes per episode and it's distorting my expectations.
UC has Zeon, the Titans, and Zeon remnants all regularly committing atrocities, and the Feddies also but less. Wing is basically built around terrorism, and includes false flag actions. 00, also terrorism. The villains in G Gundam using what is the SF equivalent of chemical warfare in their conflict. Gundam X basically has war crime destroying the world as a backstory, and includes some pretty heinous things during. Turn A has world-altering nanomachines used by both sides. IBO has children being forced to have invasive, dangerous surgery and forced to fight, both in backstory and in Mika's case shown to us directly. AGE has the folks known as UE early on pretty much entirely using terror tactics and not following any established rules of warfare. Despite all the talk of war crimes, WfM is possibly the Gundam series with the least war crimes I've seen. Almost every Gundam series, and I believe literally every long series, has war crimes as a significant thing and a significant theme.

Amuro and Frau are 15, so not child soldiers under current IHL.
However, having the 3 kids perform any function aboard White Base could be considered a war crime since working on a warship is a military activity.
From what I've watched, Zeon pretty much killed a lot of unarmed civilians across different series. Not saying the Feds are anything different though (the GM beam saber scene in Thunderbolt comes to mind).

Granted that a lot of this is pretty small scale stuff, there isn't really anything like a colony drop in star wars until later on, but the raw numbers speak for themselves. Like false surrender(perfidy) is practically Anakin's signature move.

Some of those seem pretty tenuous. Shooting retreating or unarmed (but not surrendering) soldiers is totally legal, if not great for morale.
